Wild Huckleberry and Vanilla Muffins
2 eggs
1 cup sugar
2 cups flour
1/2 teaspoon baking soda - or 1 tablespoon baking powder
1/4 teaspoon salt - omit salt if using baking powder
1 cup milk
1/4 cup butter, melted
1/2 tablespoon vanilla
1/2 - 1 cup small wild huckleberries
Directions:
Preheat over to 400.
Blend eggs, then add sugar mixing well. Add baking soda & salt, or baking powder, to flour. Add flour mixture alternatly with milk into the sugar mixture. Stir well. Then add vanilla and melted butter. Stir in huckleberries. Greast muffin tin and put in preheated oven for 3 minutes. Then fill muffin tin to just below full. Place in oven for 20 minutes or until lightly browned.
Making 1 dozen muffins.
Recipe can be doubled.
This recipe can omit the huckleberries and be used as a base for other types of muffins, the base is good by itself too.
The wild huckleberries remind of the box of jiffy mix blueberry muffin mix.
I think this is the perfect use of the wild huckleberries. They make really good muffins! You can get SO many off our huckleberry bush when its the season. They really do have a lot of flavor.

Jessica:Actually they are very simliar to blueberries, but the wild ones are very small, no larger than I would say small beads. Tasty however! =)

Twilightmama:They sound really good! We love blueberries here...Papa Bill (Jeff's dad) grows them and other berries and passes the *fruits* of his labor along to us. I'll have to ask him if he also grows huckleberries:)

Chari:These sound really good! I love wild huckleberry jam. I'll have to see if any grow around here. We got the jam when we were in Montana.
